Real world experience
The gastronomic event provides students with a real world experience of running a fine dining restaurant. Every week, they cook a premium meal and serve it to real customers. Students are in a different position each time, so by the end of the semester they will have performed many of the roles of this type of restaurant. Customers provide feedback to students at the end of the meal, giving them a glimpse of how their work would resonate with the dining hall audience.
Dishes and themes are selected in advance by instructors to ensure that students are expected to prepare a variety of meals.
“This is the last class they’ll take before they graduate,” says culinary instructor Susanna Elrod. “Everything they learn will be encapsulated in this course. They will have learned how to prepare a main course, soups, salads, appetizers, bread and desserts – all that you will find in a dinner club.
“It prepares them for the world of work and opens up opportunities for them. They learn more than just cooking basic dishes. It’s several notches higher than that. They can go anywhere once they have learned fine cooking skills. This helps to increase their employability. “
Elrod also stressed that instructors and students must adapt to college and state safety regulations to ensure this important experience is offered to students.
